PetNat, or Pétillant Naturel, is made by bottling the partially fermented must and allowing it to finish fermenting in the bottle. The resulting CO2 provides the carbonation. Typically, PetNats still have the yeast from fermentation in the bottle, which is why they are usually cloudy. This one tastes of wild strawberries and herbs, with pleasant, mild carbonation and exciting, slightly tart bitter notes. Low acidity.
