Domaine Pignier Sauvageon Côtes du Jura
Domaine Pignier is an exciting biodynamic winery, mainly known for its excellent sparkling wines. However, the domaine also produces great white wines, which are sometimes overlooked – perhaps because the labels are not as exciting as those of some of their colleagues in the region. An ouillé (pronounced uuh-ieee) Savagnin, meaning without the “sherry-like” aromas, but made in the “Burgundian” style, albeit without new wood (i.e., no wood aromas). Super complex, lots of excitement, dense structure. One of our personal favorite wines. Domaine Pignier is an exciting biodynamic winery in the Jura region. The Côtes du Jura appellation encompasses diverse terroirs in this unique alpine wine region, and the biodynamic viticulture adds complexity to the wine's character.
